With you. LogCraft Studio has no database and never receives what you log.
In your Google Drive
The app makes one sheet in your own Drive and saves every entry there. You can open, edit or download it any time.
Only that one sheet
The app can open the sheet it made, and nothing else. It can't see your other files, photos or email.
And on your phone
A copy stays on your phone so the app opens instantly and works offline. Disconnect any time in Settings.
About Google's sign-in screen
When you connect, Google asks to let LogCraft Studio see, edit, create and delete only the specific Google Drive files that you use with this app

In plain words: the app can work with the one sheet it creates for you. Google writes this for every app that uses this permission, and it's the smallest Drive permission there is.
To remove access later: Google Account, then Security, then Your connections to third-party apps and services.
